Mushrooms Bourguignon - Yield 36 appetizers
1/4 c. butter
1 c. dry red wine
1 T. finely chopped green onion
1 t. minced garlic
1/2 t. dillweed
1/4 t. salt
pinch pepper
1 pound fresh mushrooms
Place butter in 3 quart glass dish, microwave on high until melted. Stir in wine, onion and seasonings. Place mushrooms, cap side down, in sauce and microwave covered on medium high for 8 - 10 minutes, or until heated through.
Spinach Bites - yield 6 - 8 dozen
1/4 c. chopped onion
1/2 c. butter
2 - 10 ounce packages frozen chopped spinach, thawed, with water pressed out
8 ounces shredded Monterey Jack cheese
8 ounces shredded Mozzarella cheese
8 ounces grated Parmesan cheese
3 ounces crumbled Blue cheese
1/4 t. hot sauce
1 package Phyllo dough
In skillet, sautee onion in butter until transparent. Add spinach and cook for 3 minutes. Remove from heat and add cheeses and hot sauce. Mix well, set aside to cool. Following directions on package of Phyllo dough, cut sheets into strips. Place 1 rounded teaspoonful of spinach mixture on each strip and fold over. Bake at 400 degrees for 15 - 20 minutes, or until golden brown.

How about cold shrimp w/cocktail sauce. You can buy them already cooked and cleaned so that's the easiest thing in the world. Or, you can put tuna salad or egg salad or chicken salad or anything like that on slices of white bread (with the crust cut off), covering the entire surface. Then roll it into.... well... a roll. Slice into pinwheels and serve the pinwheels. Or, buy a whole pineapple. Get a bunch of toothpicks and spear them with anything you'd like -- fruit chunks, grapes, olives, cheese chunks or a combination of many things, which is what I do. Then stick the toothpicks into the pineapple and keep doing that until everything is all filled up on the outside of the pineapple. People can just take a spear of what they want and it's very neat to eat. When that's all gone, you still have the pineapple that you can slice up and have fresh pineapple. Or, deviled eggs. Or, vegetable dip. Buy one of those cocktail loaves of pumpernickle bread and sour cream and a box of Knorrs vegetable soup. On the box is the recipe for the dip. It's quite good.

These are my favorite appetizers. You can use melted velveeta and salsa mixed together as a dipping sauce.
These make alot and are inexpensive to make.
Sausage Balls
3 c. Bisquick
1 pound cheddar cheese, grated
1 pound Sausage ( I prefer Jimmy Dean Roll Sausage)
Mix all ingredients well in large bowl. (I use my fingers) Let sit 1/2 hour. Roll into balls and place on cookie sheet. Bake at 400' for 15 minutes or golden brown.

Cheddar Herb Snacks
INGREDIENTS
6 hot dog buns
1 cup shredded Cheddar cheese
1/2 cup butter or margarine, softened
2 tablespoons minced fresh parsley
2 tablespoons minced chives
2 tablespoons chopped pimientos
1 tablespoon chopped green onion
DIRECTIONS
Slice hot dog buns lengthwise. Mix remaining ingredients together; spread over the buns. Place on a baking sheet. Bake at 400 degrees F for 6-8 minutes or until cheese is melted. Cut each bun into 1-inch pieces.

Grab your Philadelphia Cream Cheese and mix one jar of Kraft Olde English Cheese with it until it is a smooth mixture. Get a bag of bagels (plain or wheat or everything, whatever you like) and tear the bagels into small pieces to dip into the cheese mixture. I usually make 2 or 3 times this amount for our family get-togethers (about 60 or 70 people) during the winter holidays. Some people I know even add taco seasoning packets to the cheese mix to kick it up a notch! This is a really versatile dip! Play with your spices and see what you like. Make the base dip and try sprinkling different spices into a teaspoon or so, until you find a taste that suits you. Good luck!

When I am having a group over and need several different appitizers I try these:
I usually prepare a fresh vegetable tray with assorted dips -- to be sure to please everyone. This can be made the day before. I also do an assorted fruit tray.
I also get several packages of cocktail smokies and put them into my crock pot, adding 1/2 bottle of Kraft regular BBQ sauce and 1/2 bottle Kraft HOT BBQ sauce and approximately 1 cup of packed brown sugar. Heat thoroughly. Stirring occasionally. Serve warm. These can be made ahead of time and re-heated.
I also get some cooked ham (from a deli or in the package -- you can also use honey ham, etc), also pick up some cream cheese. Allow cream cheese to soften to room temperature. Lay out slices of ham, wiping off any excess water. Spread cream cheese on ham slice, roll up. Cut ham and cream cheese into inch sections. Insert toothpicks. Very tasty. These also can be made ahead of time, but be sure to tray them well and prevent moisture from collecting.
I also whip up some home-made meat balls. I try to use a basic meat-loaf recipe, adding a pound of Hot Sausage (usually use Tennessee Pride or JImmy Dean) Roll into balls, and cook over low heat, turning every couple of minutes to brown all over. I then make a brown gravy and serve in a cassarole dish with toothpicks in each meatball. This can be made early in the morning and kept warm.
If you have the opportunity to make your appitizers up ahead of time you will be able to spend more time with your guests and be able to enjoy yourself.

Ingredients
2 pounds fully cooked frozen meatballs
1 bottle (16-ounce) Catalina salad dressing
1 cup orange marmalade
3 tablespoons Worcestershire sauce
1/2 teaspoon red pepper flakes
Instructions
Place frozen meatballs in the insert of a slow cooker. In a bowl, stir
to combine the remaining ingredients. Pour over meatballs and stir to coat. Cook on high setting for
2 to 3 hours.
********TEXAS CAVIAR DIP
2 (14 1/2 oz.) cans black-eyed peas, drained
1 (15 1/2 oz.) can white hominy, drained
2 med. tomatoes, chopped
4 green onions, chopped
2 cloves garlic, minced
1 med. bell pepper, seeded and chopped
1 jalapeno pepper, seeded and chopped
1/2 c. chopped onion
1/2 c. fresh parsley, chopped
1 (8 oz.) bottle commercial Italian salad dressing
Combine all ingredients except Italian dressing; mix well. Pour salad dressing over mixture; cover and marinate at least 2 hours in refrigerator. Drain and serve with fritos or corn chips. Makes 7 cups.

Meet balls
2 lbs of ground beef formed into small meatballs
1 cup of catsup
1/2 cup of yellow mustard
1/4 cup of karo
Brown meatballs, and place in a slow cooker
Add catsup, mustard and Karo
Heat until warm
Use toothpicks to serve them
