Flap - Jacks

1 egg
1 c. milk
2 T. melted butter
1 c. flour
1/2 t. baking powder
1/2 t. baking soda
4 t. sugar
1/4 t. salt

Beat eggs, milk and butter together, add dry ingredients and beat until smooth. For each flap jack, pour 1/4 c. batter into hot and lightly greased skillet, rotate pan to spread batter thin. Cook until top is bubbly, turn and brown on other side. Recipe doubles easily.

I use about 2 cups of flour ,2 tablespoons of oil, 1 egg and mix with milk (amount of milk depends on how thick you want the batter) I add a little oil to the griddle and cook. Whatever is left over, I put in the freezer and the kids could take them out and heat in the microwave.(use self-rising flour)

1 cup flour
1 tsp baking powder
1 tsp sugar
1/2 tsp salt
1/2 tsp baking soda
1 egg
1 cup buttermilk (or sour regular milk with a spoonful of white vinegar)
1/2 stick melted butter

stir up the dry ingredients in one bowl and mix the wet ingredients in another. Pour the wet into the dry and mix JUST until it is combined. Don't overmix.

Pour out onto medium-heated greased griddle and flip when they start to bubble. :) You can toss in some blueberries or chocolate chips into the batter before you start to cook them. I personally like to add some cinnamon and some vanilla to the batter too!

1 cup self rising flour
1 cup milk
1 egg
make a well in the flour and add milk and egg. MIx until just blended but not lumpy. You can fry using melted butter or vegetable oil

Try the recipe in "Joy of cooking" or "Betty Crocker" cookbooks. They both have standard recipes. Cook on medium heat and remember the first pancake is usually not pretty ( so the second one is the one some one eats).

self rising flour egg add according to thickness you want cakes buttermilk or milk . butter in frying pan cook on med. turn. keep butter handy. for pan
