We have a friend coming over for football & food. I've got some chicken breasts marinating in a garlic/herb mixture & gonna cook those on the charcoal grill.
What are some good sides to go with? It's too cold for traditional bbq sides & I want something different than mashed potatoes & peas. Any suggestions?

I have potatoes, onions, garlic,carrots, green beans, corn, tomatos & can always run to the store if needed.

Using what you already have on hand, why not try this:

Without peeling the potatoes, cut in wedges and place in big bowl. Thinly slice the onion, toss in bowl with potatoes. Mince or press the garlic, toss in bowl, too. Drizzle with olive oil and season with salt and pepper, toss. Break off a fairly large piece of aluminum foil, place potato mixture in middle, seal very good to keep from running out. While coals are burning, place potato mixture in oven for about 15 - 20 minutes at 350 degrees, then put on the grill and cook chicken alongside. Glazed carrots, green beans and corn can also be prepared, and sliced tomatoes will round out the meal with wonderful color.

Just a suggestion. Sounds really good to me, though!

Saute the veggies- if you don't have mint, you could substitute basil or dill, just use a fresh herb for this one, dried would not be nearly as good!


Sauteed Potatoes With Corn, Tomatoes And Mint

2 tablespoons unsalted butter
1 pound potatoes, cubed
1 cup corn kernels
3 ripe plum tomatoes, diced
1/4 cup fresh mint leaves
In a large sauté pan, melt the butter over medium-high heat. When the foam subsides, add the potatoes and season them with a sprinkling of salt and pepper. Stir them briefly, then leave them alone to brown well, 4-6 minutes.

2. Add the corn kernels and tomatoes and season with a sprinkling of salt and pepper. Cook, stirring occasionally, until tomatoes begin to lose their shapes, 4-6 minutes. Stir in the mint leaves and serve.

If you're already grilling, grill corn on the cob and skewer some veggies and grill them too. Maybe add a salad.

If that's too much trouble, cut the potatoes into wedges and toss with olive oil, garlic, salt and pepper and roast in the oven. Steam the green beans and carrots, and serve with the sliced tomatoes, drizzled with oil and vinegar.

A great healthy side would be mediterranean salad. Buy a can of chick peas (garbanzo beans) a can of black beans, diced tomatoes, corn, and mix it in italian dressing or a vinegarette you love.

You can also serve baked potatoes with it, or just steamed vegetables, since the salad above has lots of fiber and some carbs.

Last idea - grilled corn on the cob. Serve with butter and rub with lime... you wont belive how tasty it is!

That's a good question. I always fix my version of Oriental Salad and Twice Baked Potatoes Casserole. They always get rave reviews.

How about a grilled vegetable medley: slice Squash, onion, potato, and carrots - -par boil your vegetables and put them into foil and grill them on the side while you do your chicken, use your marinade to brush over them while they cook. We did something like that in our cooking class and that turned out great.

Caesar salad and broccoli cheese rice would be yummy or a nice twice baked potato...a crispy tomato bruschetta bread w/fresh basil
