They're probably checking the levels of cardiac enzymes in the blood. The most commonly checked ones are CK (creatinine kinase), myoglobin, and troponin.
Basically, these enzymes are contained within heart cells and they allow the heart cells to do their job. When a heart cell dies, it ruptures and spills these enzymes into the blood.
There's always a certain amount of these enzymes in the blood but if someone has an elevated level, it's a strong suggestion that a lot of heart cells may have died recently - basically a heart attack.
So checking for cardiac enzymes lets the doctors know if a given episode of chest pain was a heart attack or not. Typically this is done several times during the course of 12 hours. If they remain normal during that time, the doctors can conclude that no heart attack occurred. Sometimes a stress test is done after the enzyme tests are normal to make sure there are no blockages in the arteries of the heart that might cause a FUTURE heart attack.

It is normal for the hospital to run blood test several times while you're in the hospital. They are checking for any changes to different levels in the blood and this helps them track anything that could pose a risk to your wife. Relax, it's for her own good although I know it's hard to see your spouse in pain and they continue to poke at her with needles. It's just a precaution... no worries.

Infections contracted while having surgery or staying in a hospital are common. They maybe checking to see if she has systemic (in the blood) infection from her surgery. Or, could be something to do with blood sugar, blood fats, or she may have elevated lymphocytes. You never know until you ask. Hope everything turns out well.
