Hello,
I am planning to make a recipe which asks for bulk Italian sausage-first I am wondering what it is exactly and, more important, second if there is a porkless replacement that would work just as well.

Bulk Italian sausage is simply Italian sausage without the casings. If beef is acceptable to you instead of pork, use a good ground beef and some Italian seasoning plus fennel seeds and it might be an acceptable replacement.

If you give us more info about your recipe, we might be able to offer other alternatives.

Bulk Italian Sausage is the meat used in Italian sausage without the casings. It's usually sold in packages like hamburger meat or in big plastic rolls like refridgerator cookie dough.
A good replacement for pork sausage meat is ground turkey meat. Flavor it with herbs like dried Fennel, Oregano, Basil and garlic salt and you will never taste the difference. I would also add hot pepper flakes too. Yum.

Gee, your question isn't what I thought it was going to be! I expected another meat troll. You could use the Yves sausages if you smash them up, but you might do better using any of the 'breakfast' type sausage products and add a dash of fennel and Italian seasoning blend. If you give more information on the recipe I could get a little more specific for you!

Bulk Italian sausage is ground pork that has Italian spices added to it.

To change the sausage and use something vegetarian, you might want to look at other proteins. What you select really depends on what your dish is. If you are making a vegetarian lasagna, there are many choices available.

A grilled portabella mushroom served on a bun can even take the place of a burger.

Bulk sausage is a sausage recipe that is not put into casings, like links. Bulk would be like chopped meat.
There is nothing else you can use.

They both are Perfect for your health. If you eat both, you're better off. But yea, I'd personally choose fruits because they taste better.
