PORK CHOP QUICK SKILLET MEAL
4 - 6 porkchops
1 onion, chopped
1 can whole tomatoes
1/2 bell pepper, chopped
1 rib celery, chopped
1/2 c. green onions
Herb seasoning (Mrs. Dash)
2 (6 oz.) pkgs. wild rice
Brown chops and onions in large skillet. Add next 6 ingredients. Cook for 20 minutes over low heat. Add wild rice to chops using 1/2 the amount of water called for on packages. Stir well; cook, covered, for 30 minutes until liquid is gone. You may substitute chicken for porkchops, but the skin should be removed. This is a delicious "one dish" meal.
SKILLET MEXICAN MEAL
1 lb. hamburger
1 onion, chopped
1 can cream of chicken soup
1/2 soup can water
1/2 can Rotel chilies and tomatoes (or more if you like)
1 1/2 c. (or more) grated American cheese
Fritos (or cooked rice if you wish)
Saute onion in tablespoon oil, add hamburger and a little salt and pepper. Cook until meat is done. Mix in soup, water and Rotel. Stir to mix. Cook until hot. Sprinkle cheese on top. Serve directly to serving plates over Fritos or the cooked rice.

SKILLET TORTILLA PIZZA
This is a quick, tasty snack for when you're in a hurry and don't have the time for take-out!
1 tortilla
1/3 cup cheese (any kind)
1/4 cup tomato sauce
1 teaspoon olive oil
1/4 teaspoon each basil and oregano
olive oil spray
salt, pepper
garlic powder
hot salt or cayenne pepper (optional)
Heat a small amount of olive oil in a skillet on high.
Spray a tortilla with olive oil on both sides.
Season the top with salt, pepper, garlic powder and hot salt or cayenne pepper, if desired.
Mozzarella cheese is nice, but American, Cheddar, Provolone, Scamorza and Muenster cheeses also work well. This is a good way to use up cheese ends often available at the deli. Cut the cheese into 1/2" X 1/4" chunks. Have your ingredients ready for quick assembly on the hot pan as it continues to heat up.
When the pan begins to get hot, place the seasoned tortilla in the center of the skillet. Mound the cheese in the center of the tortilla, leaving a 1" margin around the edge of the circle. Allow a few minutes to go by, (don't walk away!) and as the cheese is partially melted and the skillet is becoming quite hot, pour the sauce over the cheese. Reduce heat at this point if needed, but the goal is for the tortilla to become golden brown and crispy.
Sprinkle the remaining seasonings over the sauce and drizzle with a few random drops of olive oil.
When the sauce is heated and the tortilla is golden brown underneath, use a large spatula to carefully transfer it to a dish.
Season with salt, pepper, and hot salt to taste (if desired) and roll up or cut into 4 triangle wedges or two halves for serving.
Each tortilla pizza makes one serving.
Simple, made with ingredients usually on hand, faster than thawing those tasteless frozen pizzas and so good!
Note: If you have flatbread or pita bread on hand, these can also be used for the crust. Spray with olive oil and proceed as above. Split pita bread by cutting along the side to make two circles. Place the crust part down. Pita will need a longer cooking time because of the added thickness, or simply place the pre-assembled pizza under the broiler instead.

Not enough info. Do you mean like cornbread that you can bake in a skillet? Do you mean hash browns - either by themselves or in combination with other items? Do you mean corned beef hash bacause I make it in a skillet? Or sloppy joes or spaghetti sauce?

You can make a pork chop "casserole". Brown 3 or 4 pork chops; season with salt, pepper, paprika and caraway seeds (if you like them); add some diced onions when you turn the pork chops over to brown the second side. When browned on both sides, add some frozen peas and a can of tomato soup. Put the lid on the skillet and let it simmer for about 30 minutes to finish cooking the chops and the rest. Sauce is wonderful on baked or mashed potatoes or egg noodles.
Or beef swiss steak: cut a 1 1/2 pound piece of round steak into individual serving sizes. Dust with flour (I put the meat in a bag and then add some flour and shake). Brown the meat on both sides. Season your meat after it's turned. Add diced onion, green peppers, carrots and a can of diced tomatoes or tomato sauce. Cover and let simmer til tender.

chicken (boneless breast or thighs)
minute rice

canned stewed tomatoes
garlic powder, parsley, salt & pepper, red pepper(optional), basil (optional)
Cut chicken into bite size pieces and saute in a skillet sprayed with pam. Add other ingredients plus a cup of water for the rice. Cover and simmer, stirring frequently until rice is tender and onion, celery & peppers are tender. Serve with a salad if desired and bread & butter.
You can use hamburger instead of chicken.

noodles
Cook hamburger, onions, chicken soup and water in skillet until flavors blend. Serve over noodles, rice, or mashed potatoes.

Western Skillet Omelet [6 servings]
1 lb. russet potatoes (about 3 medium), peeled, cubed
6 slices Bacon
1/2 cup chopped green peppers
1 tomato, chopped
3 green onions, sliced
6 eggs
1 cup Cheddar Cheese
Place potatoes in large saucepan; cover with water. Bring to boil; continue boiling 5 min. Drain well and set aside.
Cook bacon in large skillet on medium-high heat until crisp, turning occasionally. Remove bacon from skillet; drain on paper towels. Discard bacon drippings. Add peppers, tomatoes and onions to skillet. Reduce heat to medium; cook and stir 3 min. Add potatoes; cook an additional 15 min., stirring occasionally.
Make six small wells in potato mixture. Add 1 egg to each well. Top potato mixture with bacon; sprinkle with cheese. Cover skillet with lid. Cook 5 to 8 min. or until eggs are set.

Skillet Chops with Mushroom Gravy [4 servings]
1/2 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
4 pork chops
1 tablespoon vegetable oil
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup milk
Combine bread crumbs and Parmesan cheese in a large resealable plastic bag. Add chops two at a time, and shake to coat.
Heat oil in a large skillet over medium-high heat, and cook chops until brown on both sides. Remove chops from skillet, and reduce heat to medium.
Blend soup and milk in the skillet, stirring to scrape up the bits of breading left over from the chops. You can adjust the amount of milk depending on how thick you want the gravy to be (it will thin a bit during the cooking process). Bring to a gentle boil, increasing heat slightly if necessary. When soup mixture is bubbling, return chops to skillet. Cover, and reduce heat to low. Simmer for 20 minutes, or until chops are cooked through.

Cheeseburger Macaroni
1 pound of hamburger
1/4 c. chopped onion (optional)
1/3 c. ketchup
1 1/2 c. water
1 pkg Velveeta Shells and Cheese Dinner
1. Brown hamburger with onion (optional) in large skillet; drain
2. Place hamburger in skillet, stir in 1 1/2 c. water, ketchup, and shell macaroni.
Bring to a boil. Reduce heat to medium low; cover. Simmer 10-12 minutes or until macaroni is tender.
3. Add velveeta cheese sauce; stir until melted.
POLYNESIAN PORK CHOPS
Prep/Cook Time: 20 minutes
4 boneless pork chops (i have used bone in chops)
1 tsp. garlic powder
1 tbsp. vegetable oil ( i use extra virgin olive oil)
1 small or medium onion, chopped
1 can Campbell's Golden Mushroom Soup
1 can (8oz) pineapple chunks
1/4 c. water
3 tsp. soy sauce
1 tbsp. honey
2 cups cooked instant rice (0ptional)
Sliced green onions
Season chops with garlic. Heat oil in skillet. Add chops and cook until browned. Add onion. Add soup, pineapple with juice, water, soy sauce and honey. Heat to a boil. Cook over low heat 10 minutes or until done. Serve with rice and garnish with green onions.
S.O.S (Sh*t on the Shingle)
4 tbsp. butter
4 tbsp. flour or cornstarch (I prefer cornstarch)
4 cups of milk
black pepper
8 oz jar of dried beef- cut into pieces (Very important: RINSE IN WARM WATER and drain, takes away the saltiness)
1/2 pound of hamburger cooked and drained (optional)
Melt butter in large skillet over low heat. Whisk in flour to form a roux. Whisk in milk, a little at a time, increase heat to med-high and cook stirring, until thickened. Stir in chipped beef , hamburger (optional) and seasoning, heat through and serve over toast or rice or even a baked potato.
