dust it with seasoned flour(salt&pepper) makes it nice and brown and crispy and you retain the natural juice from the fish. but if you want it without flour put a lid over the pan.

Use kitchen paper to absorb the water then rub some salt and pepper.Lastly dust some corn flour on the fish and lower it into the frying slowly.

Buy a screened lid at either Family Dollar or Dollar General it keeps the grease from flying all over the stove top. It just a lid with a screen in it.

They make a special lid for just this problem. Its not really a lid, its made out of stainless steell and has a screen on the top and a handle, just put it on the pan and no more grease.

Make sure you dry the fish off before pan seering it. Water is the number one enemy of hot oil and is what causes that spitting.
