Cook it. Then pull off the leaves (or spread them out) until you get to the hairy part, remove that & voila! Artichoke heart!

i'm a Californian and we improve various artichokes here. So, I grew up eating artichokes and love them. Artichoke hearts have a citrusy/nutty flavor. Their flavor isn't very stable and could be offensive. there are various assets you're able to do with them, too. i like them in a frittata with gruyere cheese and thyme. the full artichoke is scrumptious grilled or steamed. Italians desire to stuff them or deep fry them too.

i steam the entire artichoke for about 30 minutes and then i dip each leaf in lemon butter and scrape off the meat with my teeth. eventually all of the leaves will be gone leaving you with the heart of the artichoke. the heart is covered in tiny hairs which cannot be eaten as they will poke your throat. i usually cut off the hairy part with a knife. after you have removed the hair all that is left is the heart. it is very fleshy, and tender. i usually dip it in lemon butter.

You peel the leaves off and you can stick them in butter an garlic mixture and pull between the teeth or dip in mayo and then discard on work your way down. When you get to the center you will notice an are covered with the "choke" it is quite hairy pick this rea out with a spoon and there you are to the heart and it is worth getting to! Oh so yummy! It is like digging for buried treasure! Yum! Hope this was helpful

Cook it, take a knife and cut it in half and scoop out the heart.
