basically what happened is that i convinced my mom to buy manicotti, on the condition that i would cook something with it.
so i was like, fine, i'll go online to find some recipes. i found a lot of recipes, but they are all with dairy in it (Except for mushroom spinach-and i hate both). and the problem with dairy is that orthodox Jewish people can't eat meat and dairy together, and they can't even use an oven for meat and dairy. and i only have a meat oven, so i can't cook any manicotti recipes with cheese in them, especially not chicken ones.
so does anyone have any dairy free(but not soy) manicotti recipes????

this is me again from a diff email address, cuz i dont know how to reply to an answer.
meowy- if ricotti is a cheese, then i cant make the manicotti with the cheese in it in the same oven that i made any meat product.
and andrea, regarding 'stuff it with meat and pour spaghetti sauce over it. ',
do you know any specific recipe?
cuz i wouldnt really know how much of what and stuff like that to put

I'm confused, if you can't cook meat and dairy together then why can't you just fill the manicotti with ricotta and use a spaghetti sauce with no meat in it?

All I can suggest is can you "bake" it in the microwave? You're really just reheating the precooked manicotti shells and whatever you've stuffed them with and the sauce. They won't get the browning effect that the oven would give them, but they should be fine.
