The recipe I use doesn't call for chilling the dough prior to baking, if that is what you're asking. IF you mean letting them cool after, well that is up to you.

If you are chilling the dough prior, just pop it in the freezer for about 15-20 minutes. After baking, a cookie rack works great for cooling quickly, you can also put them in the fridge, but you can eat them as hot as you can stand them.

Our recipe never called to cool/chill it beforehand. You just need it solid enough to be able to roll a ball shape in your hand. You can lightly dust your fingers and palms with flour to keep it from sticking.

We used to make and bake a batch of Snickerdoodles in a 50 minute Home Ec class, so I know we didn't have time to chill the dough.

I have a recipe that says to chill it for a couple of hours.

Speeding up the process: put the dough in a ziplock bag about gallon size, air out, mash flat as possilble. Put in freezer for 30 minutes.

Easier to spoon out that way.

Yes, otherwise dough will be sticky and create a mess.

Yes, but you can put it in the fridge or in front of the a/c to cool it.
