Scalloped Cauliflower
1 med. head of cauliflower
3 T. butter
1/4 c. all purpose flour
1 c. warm milk
1/2 t. salt
1 c. shredded cheese
Cut cauliflower into flowerettes. Cook in a small amount of water until crisp-tender, drain. Place in lightly greased 9 x 13 " baking dish. Melt butter in saucepan, blend in flour. Gradually add milk, whisk and cook until thickened, add salt and simmer for 5 minutes. Spoon mixture over cauliflower, top with grated cheese. Bake 30 minutes at 350 degrees.

Steam it in a pot of boiling water. If you don't have a steamer, just boil it until a fork will go into it. I like cauliflower with cheese on top. The real stuff, no Velveeta for me!
Edit: Hey I like stopmelting2000's idea. I think I'm going to try it out some time. Oh, and the mock potato casserole... I've had mashed potatoes with some cauliflower in it for diabetics, and while you can totally tell it's not potatoes, it's not a bad replacement.

My hubby is diabetic so he can't have potatoes so I found this recipe on the web that is wonderful - it uses cauliflower in place of potatoes. Tastes kind of like a twice-baked potato. My hubby, son, his wife, and kids all love it and asked for it to be served at Thanksgiving!
MOCK POTATO CASSEROLE
1 head cauliflower
1/4 cube butter
ground black pepper
4 oz cream cheese - cut into cubes
2 green onions - green and white - chopped fine
1 1/2 lbs bacon - cooked and crumbled
2 c shredded cheddar cheese
Boil the cauliflower until your fork can go into the center easily. Drain and mash it with a potato masher. Add the black pepper and butter and mix well. Add the cream cheese and mix well. Add the green onions, bacon and cheddar cheese and mix well. Put in a casserole dish. Cover and refrigerate overnight. Cook in a preheated 350º oven for 30-40 minutes or until it is bubbly. (You can cook it as soon as you put it in the casserole dish but the flavors meld better if they have a chance to set overnight.) If you cook it as soon as you put it in the casserole dish, just bake it for 25-30 minutes or until it bubbles. Guarantee you'll like it.

hey. cauliflower is my favorite vegetable. do NOT boil or steam it. this adds nothing to the flavor. cut it into small florets and roast it with olive oil salt and fresh pepper. if you have a small toaster oven this is very fast and easy but its just as simple in the oven at 425 degrees. it will caramelize and be just glorious. try it, you will be a beleiver guaranteed. you wont need cheese or anything.

Ciao Carl,
One of my favorite veggies.... trim the green off, put in a pot (big enough to hold it) of salted boiling water - add a glass of milk which will keep the cauliflower white - and cook until semi-soft. Pull out of pot with a sturdy slotted spoon. serve in pieces and dress simply with olive oil and maybe a bit of lemon or white vinegar.

You cut it up and either steam or boil it. Steaming it will be crispier then boiling it. some people boil it in lots of butter.
