Fresh Parsley is what they mostly use, and it is eatible. It is used to freshin your breath and cleanse the pallet after a meal. You don't have to eat it, and most people don't. It's use to add color to the plate and fill in the empty areas so it looks as if you have more food on the plate. It's basically catagorized as a Garnish.

It really depends on what the garnish is. Parsley of course is etible, we use it chopped in all kinds of foods however restaurants tend to put a "sprig" on your plate to garnish it. Sometimes you will see a piece of escarole, romaine lettuce with an orange slice on it, for garnish. Most of the foods we put on our plates as a garnish is etible.

Parsley. It is edible. If you have a meal that is heavily seasoned with garlic, chew on the parsley after your meal. It's nature's breath mint, and does a nice job of getting rid of garlic breath.

Parsley. Yes, you can eat it, but by itself it's not much good. It's just for looks. Or, if you want, you can take it home to add to soups or potatoes!!
