Get a boston pork butt or a beef chuck roast...either one. Brown in a little oil in a heavy skillet, until well browned on both sides. Add to crockpot, add a bottle of beer, some chopped garlic and onion, and a cup of water or broth...Sprinkle in some salt and pepper and let simmer away for 8-10 hours....out of this world and super easy. If you want to, add some potatoes and carrots and whole onions about 1/2 way through the cooking time! The browning will give you your best flavor!
The cheaper, fattier cuts of meat do best simmered in a crockpot for a long period of time...that's the beauty of them!

Most tender would be high grade, free range beef stew cooked low and slow with no added salt, in a mix of potatoes, turnip, carrot, onion, and celery.
Another very tender dish from the crock pot is chicken breast left on the bone, with new potatoes and finished with cream.

(It was the part about the best meats for slow cooking being those that are cheapest, fattiest --and with the most connective tissue, which melts inside the meat and bastes it inside-- that made me choose that one.)
