This is one of those cooking questions with no "absolute" answer. As many have already answered, "it depends on the size of the apple, and how it is cut. The smaller the pieces are cut the less space remains between the pieces, so more apple can fit into a cup. Remember also that you are discarding the peel and the core, so while a whole apple overflows a cup measure, the sliced apple has a smaller volume. The volume of 1 Cup (U.S.) is 14.4375 cubic inches. That's 14&1/2 one-inch cubes.

Well it would probably be one apple but to get a better answer cut up one apple into chopped pieces about an inch think and measure them in a measuring cup if that isn't enough add enough so that there is one cup.

well...sorry, but it depends on the size of the apple - and also, how you cut it. Does the recipe tell you the size of the dice?
In general I would say that if you buy 2 apples you should be covered - you'll probably have some left but you can always EAT it!
