Free feeding is clearly not the way to go.
Since you have the hands and fingers capable of manipulation--fill his food bowl and put the rest of the food where he can't reach it. Set the bowl down and take it up 15 minutes later and put it away. Put the bowl out 4 times a day, for 15 minutes each time. That should be enough.
Cats like schedules, they adapt quick to when they know food is available, and since they can only process what they eat, yours is not going to be putting on 4 pounds a month with only four 15 minute sessions a day at the bowl.

Take the food away, feed him twice a day and only as much as he should have for his size and age. My guess is he now has a really bad tummy ache from over eating and is now eating even more because a tummy ache can feel like hunger pangs. Take him off all dairy and other food as well.
If he is eating as much as you say you must be cleaning his litter box every couple of hours.

The can, or your vet either one, should be able to tell you how much to feed. Has your vet told you your cat is overweight ?
I leave out dry food for mine all the time .. they do not really over eat .. the one is about 2 pounds overweight but that is about all.

Also, you might want to try dry food, or mixing the wet and the dry. Wet food is too rich to give you pet all the time. It should be more like a treat. If you cut out the wet food, he may lose some weight :D

Put less food in his bowl. Do a google search for the proper amount of food to give a cat and then give him that much.
