I have alot of canned corn beef on hand and not sure what to do with it for dinner.
Anyone out there have any ideas for dinner recipes, that have to do with canned corn beef?
Need to use it tonight and would love to hear some of your ideas for dinner, thanks alot.
And the one I make for dinner tonight will get the best anwser.

I'm making one of my hubby's favorite comfort foods. He says it's the perfect replica of his mom's baked bean dish, and since it has meat, he'll eat it as a main course. 1/2 lb. ground beef 1/2 red onion, chopped 1/2 green pepper, chopped 2 (15 oz) cans pork and beans, drained 1/2 cup ketchup 1/3 cup brown sugar 1 tablespoon chili powder 1 Tbsp. Dijon Fry up the beef, onions, and green pepper. Add everything else. Heat through. Place in a dish and bake for about 20 minutes at 375F. Or you can just simmer it for 15 minutes on the stove top.

Corned Beef and Potato Bake

INGREDIENTS:

* 3 cups diced corned beef
* 2 tablespoons butter
* 1 cup chopped onion
* 1/2 green bell pepper, chopped
* 1/2 teaspoon dried leaf thyme
* 2 tablespoons spicy mustard or grainy mustard
* 16 to 24 ounces hash brown potatoes, thawed or grated potatoes
* freshly ground black pepper
* 1 1/2 cups shredded cheese

PREPARATION:
Heat oven to 375°. Grease a 9-inch square baking dish or 2 1/2-quart casserole. Melt 1 tablespoon of the butter in a large skillet over medium heat. Add onion and bell pepper and cook, stirring, until tender.
Stir in remaining butter, the thyme, and diced corned beef; sauté for 2 minutes. Stir in mustard and set aside.
Press the potatoes lightly in the baking dish. Sprinkle with pepper, and then top the potatoes with about half of the shredded cheese; spoon the corned beef mixture over the cheese. Sprinkle remaining cheese over the corned beef mixture. Bake for 30 to 40 minutes, or until hot and lightly browned.
Serves 4.

Add some Uncle Bens cooked Brown Rice or add some mixed vegetables--------a few cheese cubes may be mixed with the corned beef-----------get some cucumber squash and wash it , but don't take the skin off and slice off the ends and then slice it up like potatato chip pieces and cook it in the microwave for a short time. Don't forget dessert! A piece a fruit!

Canned Corned beef doesn't sound too pleasing. I made Chili last night, will eat more tonight

Aside from the usual, with cabbage and potatoes...I like it to make Ruben sandwiches - open face with swiss cheese and cole slaw or with Manwich, instead of ground beef for barbeque sandwiches.

MY AUNT USED TO MAKE THIS ,2 CHOPPED ONION,SAUTE IN OLIVE OIL, 1 DICED CLOVE OF GARLIC THEN ADD 4 CANS OF CORN BEEF, 2 CANS OF TOMATO SAUCE SMALL,A LITTLE WATER AND BLACK PEPPER AND GREEN PIEMENTO OLIVES, MIX AND COVER SIMMER FOR 15 MINUTES,THEN SHE WOULD MAKE FRENCH FRIES,AND A POT OF WHITE RICE, SHE WOULD SERVE IT WITH A LITTLE FRENCH FRIES AND A SCOOP OF RICE . IAM FROM PR AND THAT HOW WE MAKE IT.NAMASTE
