BEEF & CABBAGE QUICHE
2 (15 oz.) cans corn beef hash
1/4 c.flour
2 eggs
4 eggs, beaten
2 c. light cream (2%)
1 c. shredded Swiss cheese (4 oz.)
1 c. shredded cabbage
2 green onions
1 tsp. salt
5 drops red pepper sauce
Paprika
Heat oven to 375 degrees. Mix corned beef hash, flour and 2 eggs thoroughly. Press mixture firmly and evenly against bottom and sides to within 1 inch of top of ungreased baking dish, 13x9x1 inches. Bake meat crust 25 minutes. Remove meat crust from oven; drain. Reduce oven temperature to 350 degrees. Mix 4 beaten eggs, cream, cheese, cabbage, onions, salt and pepper sauce; pour into meat crust.
Sprinkle with paprika. (At this point, quiche can be refrigerated up to 24 hours.) Bake quiche until knife inserted 1 inch from edge comes out clean, 50 minutes to 1 hour. 8 servings.
BEAN AND GARLIC DIP
2 cups pinto canned or dry cooked beans
one quarter cup mayonnaise or salad dressing
1 clove garlic; finely chopped
1 1/2 teaspoons red chiles; ground
one quarter teaspoon salt
dash of pepper
Mix all ingredients. Cover and refrigerate 1 hour. Serve with tortilla chips. Makes 2 cups of dip.

Five-Star Mexican Bean Dip or Casserole
1 9-ounce package tortilla chips
4 15 1/2-ounce cans pinto beans, rinsed and drained
1 15-ounce can whole kernel corn, drained
1 14 1/2-ounce can diced tomatoes, drained
1 8-ounce can tomato sauce
1 envelope taco seasoning
8 ounces shredded cheddar cheese
Optional garnishes:
shredded lettuce
chopped onion
sour cream
salsa
jalapeno peppers
Preheat oven to 350° F.
Crush tortilla chips and sprinkle into a greased 13x9x2-inch baking dish.
In a large bowl, combine pinto beans, corn, tomatoes, tomato sauce, and taco seasoning. Mix well and pour over tortilla chips. Sprinkle shredded cheese evenly over top. Bake for 25 to 30 minutes. Serve with your choice of optional garnishes (listed above).
Serves 6.

HOMEMADE BEAN DIP
1 lg. onion
1 bell pepper
1 sm. can chopped green chilies
1 tbsp. butter
1 can refried beans or can pinto beans drained and smashed
1 c. shredded cheddar cheese or Velveeta
1 sm. jar Picante sauce (hot or mild)
In medium saucepan, saute onion, bell pepper and green chilies in butter until tender. Add beans and cheese. Heat until smooth. Pour into a greased baking dish and sprinkle with more grated cheese. Heat at 350 degrees until hot.
