The teacher probably wants you to bring it whole then chop, dice or shred and cook it there to add to the omelet - it will stay nicer if you leave it whole until ready to prep. Good Luck!

Better idea:
Cut peppers Julienne
Cut Onions Julienne
Saute together , divide in half -reserve
Do a quick concasse on the tomato
Seed and Julienne
Boil the potato until almost done and cooked but still firm
place in the iced water left over from the concasse
Peel
Cut in half lengthwise
lay the halves flat
cut in half lengthwise again
then cut into quarter rounds using about 1/2" spaces between the knife cuts
Set up two saute pans
Start by making your home-fries first
when the potatoes are starting to brown add your reserved onions and peppers
Fire up your omelet pan
when your eggs start setting up add the onions and pepper
30 seconds later add tomatoes
Serve on a hot plate

Boiling the potato in salted water with the skin on, then wrap in foil. Refrigerate tlll you go to school in the morning. You can leave the peel on till class. A potato peels very easy when it is cooked this way and we don't know if your teacher wants the skin or not. Try not to use idaho, they tend to get mealy, but OK to use if that is all you have. Enjoy your class and good eating.

The potato is an ingredient in a Spanish omelette, ready cooked to save time, just boil it whole in the skin.

You're very preachy, Joan! Part of the problem is not "mothers not knowing how to cook" but mothers being expected to do a great deal more things today than they did in the "good old days". Back then, women stayed home and devoted themselves to the home. These days a mother is expected to have a career as well as cooking, cleaning, ironing, looking after the kids, having "me time" and all the rest of it. We're not all superwoman and some can't cope with the demands, which means they turn to convenience food instead of spending time cooking from scratch. Other problems can include insufficient cooking facilities (low income families often suffer from this problem - we currently have a kitchen thats virtually unusable and are waiting for the council to repair it) and lack of money - sometimes poorer families just need something quick and filling for their kids. Incidentally I despise Jamie Oliver and as a mother I take great exception to his decree that anyone who "lets their child eat crisps is a t*sser and an a*sehole. The man is so overinflated with his own self importance he's about to pop. If he eats so healthily, why is he so clearly overweight?! I did Home Ec at school and learned absolutely nothing about cooking or "healthy" food (note: all food is "healthy" if eaten in moderation) - it was usually fairy cakes or some rubbish like that. I don't actually enjoy cooking much but if I do need advice on what to cook for my son or who to make it I'll ask my OWN mother not some jumped up self important little mockney TV chef or the nanny state education system, "Obesity" isn't caused by "frozen beefburgers" its caused by not enough exercise and too high a calorie intake - either decrease the calorie intake or increase the calorie output through exercise. Its either or. Of course, you're superwoman so I'm sure you've never even touched a ready meal, eh Joan, lol!? Please forigve us lesser mortals for not reaching your lofty heights of excellence.

Boil the potato until it is about 1/2 way cooked - peel it before hand! Ask an adult to help you to test it.

You can cut the potato into small segments and boil it with a pinch of salt. You'll need to ensure it's cooked right through. It will need to be chopped into the omelette anyway, so cutting it to cook it won't matter. Spanish omelette is delicious - enjoy it!

Looking at these 2 recipes, it sounds like baked, as they would fry up better as someitmes boiled doesnt cook the same.
As if you were spending the fuill time with it , most people make thins slices and fry them up right there
And a baked potato is much easier on time wise to do than boiled, they can be easier to chop up, as sometimes boiled can get slimy as well.
if you want to be safe take one of each in , a boiled and a baked ( then if someone forgets their you can give them the extra.)

you could microwave it for like 5 mins with a really wet paper towel around it.
then dice it... put some spices or something..
for the omelet.. i would cut everything up and put it in the egg when youre whipping it.
