Batter for fruit and fish and pancakes to me is almost the same. A little thicker or thinner as it pleases you.

1 cup all purpose flour
2 tbsp oil
1 tsp baking powder
1 tsp sugar
1 cup milk or 1/2 cup milk and 1/2 cup water or 1 cup apple juice or 1 cup orange juice. one of these, of your choosing.

1/2 cup seltzer water or club soda
1 tablespoon oil
1 egg white
1/2 teaspoon cayenne pepper
1 teaspoon kosher or sea salt
1 cup Wondra or pastry flour
1/4 teaspoon mustard powder
1/2 teaspoon onion powder
Pour beer and seltzer water or soda into the bowl of a blender or food processor (or a stick blender can be used). Sprinkle in pepper, mustard, salt and onion powder and oil. Pulse until combined. Add flour last, and process only until mixed. Batter may still be slightly lumpy, but almost smooth. If too pasty, add a teaspoon of water at a time until mixture has the consistency of a pancake batter.
Whisk egg white until frothy in a shallow bowl. Gently stir in contents of food processor, mixing until combined.

Deep Fried Bananas
3/4 cup white rice flour
1/4 cup tapioca flour
2 tablespoons white sugar
1 teaspoon salt
1/2 cup shredded coconut
1 1/4 cups water
10 bananas
3 cups oil for frying
In a medium bowl, mix rice flour, tapioca, sugar, salt and coconut. Stir in water, a little at a time, and mix to form a thick batter.
Peel the bananas and cut each lengthwise into 3 or 4 pieces. Heat oil in deep-fryer or deep wok to 375 degrees F (190 degrees C).
Completely coat each banana slice in batter, then fry in hot oil until golden. Drain on paper towels. Serve at once

For fried bananas, mix one tablespoon rice floor, with 1 cup of white flour, and one big spoon of butter and some water to get a thickish consistency to coat diagonally cut plantains and fry in hot oil until crisp and golden. You can add vanilla extract to the batter for flavour and make sure there are no lumps and the consistency is smooth.
For savoury snacks, you can mix chick pea flour with water, and add salt to taste. Coat potatoes or gherkins in it and fry.
Boiled potatoes, mixed with bread or bread crumbs, little bits of onions, chopped corriander leaves, cumin seends, red chilli powder, and salt moulded into little sausages and fried tastes great.

From scratch, or better yet buy a batter mix, like Bisquick and add liquid. I use a pancake dry mix and add beer for a beer batter.
