i currently use green lettuce(curlier and darker than regular head lettuce). it's too delicate and wilts away so fast. i want to use a stronger, darker, healthier green but i don't know what would taste normal in a sandwich.

spinach is yummy.

lacinado/dinosaur kale is good. the other kind of kale may be too bitter.

sprouts are nice and crunchy and super healthy; a fun alternative to leafy greens.

If you do want to use lettuce, just keep it in a separate container until lunch time and then assemble the sandwich.

Cress, cos lettuce (much longer leaves & stronger. They don't really wilt.), cucumber, chives, cabbage (but only a little bit), asparagus.
Out of ideas. Hang around a sandwich bar & steal their ideas.

Spinach is good but try also the shreded cabbage or a thin slices of cucumber and a string onions.

how about wilting down your greens first (like maybe some large spinach leaves tossed with some garlic slices, chili quickly stir fried in olive oil) then adding them to your sandwich. maybe top with some caramalized onions/roast beef/cold chicken/roast or sundried tomatoes...

buy leaf lettuce and make some kind of peanutty gingery basily tofu mixture and put in the lettuce leaves and roll up.

Arugula or basil add great color and flavor. You could also try radicchio. And for an interesting twist and added crunch, thin-sliced cucumbers are yummy...

Romaine!
It is the only green I buy for salads and I also use it in sandwiches. It is hearty, and holds up in any kind of sandwich.

baby spinach is great in sandwiches. i prefer it to lettuce.

Fresh spinach is awesome. Has an almost "meaty" texture.
