Your girlfriend won't be happy when she find out what you want to do behind her back. She is not your wife only your girlfriend. Therefore she has her rights to go out or chat with anyone she likes. May be better to just talk with her how you feel about her.

You can buy a small piece of hardware called a key catcher. You install this between her keyboard and computer. It will capture EVERYTHING she types in. Later you can retrieve the key catcher, type in a password and see the results.
