Twice Baked Potatoes
Since you can prepare them in advance (even the day before) and bake them the second time right before supper, this work really well for company. Just refrigerate until ready to bake. A great side for steak or roast.

4 large baking potatoes
1/2 cup butter, softened
1/4 cup milk
1/4 cup sour cream
2 tablespoons parmesan cheese
1/4 cup sharp cheddar cheese, shredded
1 1/2 teaspoons salt
1/2 teaspoon onion powder
1 dash cayenne pepper
paprika
Preheat oven to 425 degrees.
Wash potatoes.
Place in shallow pan.
Bake for 45 minutes or until easily pierced with a fork, turning once.
Remove from oven and reduce temperature to 350 degrees.
While still hot, carefully cut potatoes in half, lengthwise.
Scoop out potato, leave an 1/8 inch wall.
Place potato centers in mixing bowl, add butter and milk.
Whip until fluffy.
Add sour cream, cheeses, onion powder, salt and cayenne pepper.
Mix.
Spoon back into skins.
Sprinkle with paprika.
Bake in greased shallow baking pan.
Bake for 30 minutes or until they begin to brown.

Cut enough of the skin off the top of each potato to be able to scoop the potato out of the skin and into a mixing bowl.
Add butter, sour cream, grated cheese and mix together well. Add salt and pepper to taste.
Fill the skins with the mix and top with 1/2 slice American cheese. Bake for 20 to 25 minutes just until heated through.

I haven't tried this yet, but I intend to soon! I just found this recipe and it sounds yummy. 1) slice potato into rounds 2) bake for about 20 minutes until soft 3) top with pizza toppings of your choice and then with cheese 4) bake until the cheese melts. Some people reviewed the recipe and said it was yummy but messy, so it's best to add maybe just a few toppings and then the cheese. You can play around with the baking times if you want a crispy or softer potato. Either way, it's something different! Another thing I like to do sometimes is make sweet potato fries. Very yummy!

After scooping out the baked potatoes, mash the pulp with some sour cream and some onion powder, garlic powder, a pinch of salt and white pepper. You can also toss in a pat of butter. Grab some squares of aluminum foil and sort of form them into a boat to keep the potatoes upright. Pack with the mixture, then grab a handful of shredded cheddar and pack it on top. Sprinkle with paprika and dried parsely. Bake at 350 until heated through, maybe 30 minutes.
That's my basic one, you can also add whatever else you want. I like the ones with taco meat too.

The recipe I got from my ex-mother-in-law is:
- 6 medium potatoes, baked, cut in half, scooped out (reserve skins to use as shells)
- 1 Can Campbell's Cheddar soup (or 1/2 C cheddar cheese if you can't find the soup)
- 1/2 lb ground beef, browned with onion & celery
- Salt & Pepper to taste
Blend the potato "guts" with the meat till well mixed. Add soup (or cheese) and stir till well mixed. Scoop back into shells & sprinkle with salt & pepper & top with cheese (if desired). Bake at 350 for 30-40 minutes (till cheese bubbles & starts to brown).

Just a tip if you like extra crispy skins......after scooping the potatoes out, put the empty skin shells in the oven while your mashing up the potatoes to get them firmed up, then proceed to stuff and bake again. I guess it's "thrice" baked potatoes!

You've already got two really good recipes - with one exception. Not everyone can eat Cayenne pepper. I would leave it out of the first recipe. Good Luck!
