I just freeze the apple slices in zip lock bags until ready to make the pies or whatever. they keep better than the finished product.

Hi Rebecca, Yes you can pre - bake it. If you are serving it warm, and if you make it the day before there will be no need to freeze it. Just put it back in the oven for ten minutes before you are ready to eat it. If you are short for time the day before then by all means freeze it. Just make sure it is covered in the freezer and boxed so it doesn't get ,broken, take it out on the day you want it and stand it at room temperature to defrost. Then reheat in the oven as before. Once you take it out of the Freezer ,if you can handle it easy without it breaking, stand it on a clean lint free tea towel or glass cloth this may help the base from being soggy, as if it sits on something solid it may stay damp at the base. If it is of a very short (crumbly texture) just move it as little as possible and it may be best to reheat on a preheated baking sheet to help dry the base out.I hope this helps,All the best.Rab

RE:
Can you freeze baked apple desserts?
I have a few pounds of apples here and want to make pies, apple crisps etc. Can you freeze these and if so, for how long? Thanks again.

Absolutely! I do it all the time. I peel and cut the apples, place them (preferably in a single layer) in a ziploc bag and freeze. I'm not how long you can keep them, but the apples that I'll freeze now will be used to make apple pies 'n stuff for chirstmas.
Apples are one of those fruits with a real long 'shelf life' too, unlike bananas or strawberries, ect.... So unless you see that your frozen apples have freezer burn, they'll be good to bake with.
Good luck!

If you bake them before you freeze them, they are pretty soggy when you defrost them.
You can freeze them raw, though, and bake them when you are going to use them. Lots of companies make frozen apple desserts like this, and some of them are quite acceptable.

Yes you can! My husband buys us homemade apple dumplings every year around this time. I usually freeze about 6 of them. Just make sure you cover them properly. I usually use aluminum foil and freezer zip lock bags. Good Luck!

use some dough leaves, and put there the apple paste, then roll tthem, cut them,do whatever you like, but dont bake them, just put them in the freezer, then, when you'll need them, just bake the pies.
Obs: use the dough which accepts the freezer
