We had cracker pudding in Lancaster, Pa at the restaurant 'Good and Plenty'. They said it was a local favorite. I'd love to make this at home, help?

Cracker Pudding is a Pennysylvania Dutch favorite. Here's a recipe:

1 quart milk (recipe suggests whole milk)
1 cup coconut, shredded
1 cup saltine crackers, finely crushed
1 cup sugar
1 teaspoon vanilla
2 eggs, separated

Mix all ingredients except eggs.
Bring to a boil, stirring often.
Beat 2 egg yolks.
Slowly stir in the yolks to the other ingredients.
Cook on medium to medium-high for 30 minutes, or until thickened, stirring often (mine only took about 20 minutes).
Pour into a glass baking dish (I use a round one).
Beat the 2 egg whites until they peak.
With a spoon, add dollops of the egg whites over the top of the pudding.
The egg whites should not be spread, just dropped by the spoonfuls around the top of pudding.
Broil until egg whites are browned.
Refrigerate until fully chilled.

Ingredients
4 cups milk
1 cup crackers
2 eggs, beaten
3/4 cup sugar
1/2 cup shredded coconut
1/4 teaspoon vanilla



Bring milk to almost boiling, but watch it so it doesn't boil over. Put dry ingredients in bowl. Stir them into hot milk. Stir a few spoonfuls of hot mixture into beaten egg and then add eggs to mixture. Boil about 3 minutes. Chill and serve.

Ingredients
4 cups milk

2 cups coarse cracker crumbs
1 cup shredded coconut
1 teaspoon vanilla
3 Tablespoons sugar

Scald milk in top of double boiler. Beat egg yolks and add 1/2 cup sugar. Add egg yolk mixture gradually to scalded milk. Stir constantly. Allow to cook for one minute and then add cracker crumbs and coconut. Stir until cracker crumbs are soft and mixture is thick. Remove from heat and add vanilla. Pour into a buttered baking dish. Spread with meringue made by beating 3 Tablespoons of sugar into stiffly beaten egg whites. Bake at 350 degrees until the meringue is golden brown.

Serves: 6 to 8

* 1/4 cup shortening
* 1/3 cup white sugar
* 1 teaspoon vanilla extract
* 1 egg yolk
* 1/2 cup raisins
* 1/4 cup chopped walnuts
* 2 cups graham cracker crumbs
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 2/3 cup milk
* 1 egg white


1. Preheat oven to 350 degrees F (175 degrees C). Grease six, 6 ounce, ovenproof custard cups.
2. Cream together shortening, sugar and vanilla. Beat in egg yolk. Stir in raisins and nuts. In a separate bowl, combine graham cracker crumbs, baking powder and salt. Add to batter alternately with milk, stirring until smooth. Whip egg white until stiff. Fold into batter. Pour into prepared custard cups.
3. Bake in preheated oven 25 to 30 minutes, until set.
