Grapes don't grow on trees, they grow on vines. I have several and, I get rewarded every year with a nice big harvest of grapes. It doesn't happen right away, this is the best part. It's the nurturing of the plants, then the harvest.
It takes about three to five years before you start to realized a harvest.
This year, one vine gave me thirty (30) pints of Grape jelly and two gallons of Juice.
Last year that same vine gave me six gallons of delicious wine.
It takes, time, you have to keep at it. Go to your extension office and pick up literature about Grapes and what they will give you, I'm sure if your patient, you'll enjoy the fruits of your labor.
The trimming of the vine every years makes it look like a tree after awhile, maybe this is where you got the idea they're trees, they look like it after a few years.
The Oriels and Cardinals come every spring and take the rough bark that sloughs off the vines and use it for nests, they fight all spring over the best pieces.

The first thing you need to do is to understand the process not all types of grapes want the same care or location. That is why so many grapes of different species are grown in different locations.
The easiest way to do this is to research the internet. Gather all the information you can prior to planting the rootstock.
Example Never let the rootstock become dry. Never plant the root stock the day it is received. Put is in a bucket of water but NEVER longer than for a day.
I have included a link for research. The best thing to do is to enter into your search bar:
Growing grapes in (put your state name here) that way you have a clear idea of what grows best in your climate.
I live in S.E. Missouri Wine Country.
My grandmother grew the best concord grapes around.

Go to a nursery; get the kind of grape vine that you want, and plant it. That's all there is to it :-) You can grow one from seed, but it is going to take a LONG time to produce grapes; a vine that's a few years old will produce much sooner, and really doesn't cost all that much.
Enjoy!
