Authentic Mexican jumping beans have actual worms in them, but the mass produced jumping beans have two magnets in them. When they are shaken and the two opposite sides are facing each other they move apart quickly making the bean look like it's jumping.

A tiny weevil lays its eggs in the young bean. When the egg hatches, the larve begins to move about eating the bean from the inside out, and that movement causes the bean to move.

They don't.

They're little plant galls.
If you hold one in your hand, the warmth of your hand will irritate the grub inside. He'll bang up against the insides -- and the gall will wobble back and forth. No real jumping.
