I'm pretty sure it's plaster anyway in my upstairs. Have to take it down, but don't know if drywall is best to put back up? I'm assuming it's the cheapest, but is there other things i should consider, like something else that's best insulation? thanks

Take down the plaster and the lath. Nail up batten strips vertically 16" on centers. Put in insulation, stapling the paper facing to the wood batten strips. Hang the drywall. Tape and float. Texture. Paint.

dry wall is the way to go re-insulate in the places needed but you may have to shim out the drywall to match trim or use a shim to the back of trim as drywall is usually thinner than plaster and lathe

Drywall or sheetrock is the best and easiest to put up. Insulate well before hanging the drywall.

Dry wall. If you need insulation, put in some insulation first then Dry wall.

Insulate with fiberglass batts and then sheetrock, tape and paint.
