One of my favorites is Muenster cheese, then Provolone, Mozzarella, Mild or Medium Cheddar....ohhhh, I just love cheese!!! :-)

I love extra sharp cheddar. It's not exotic, but it's incredibly delicious.
Any smoked cheese is awesome.
Have you ever triend Bulgarian feta? It's sort of like traditional feta, but so buttery and amazing.
Cheese is the pinnacle of human achievement. Possibly sausage too. I haven't decided.

smoked hard cheddar. and only find the goodstuf once a year when it is apple picking season here in michigan..mmmmmmmm
fresh mozzerella, there is no comparison. packaged stuff [ cheessticks] are crap..
fresh, parmegana grana,mmmmgreat on spagetti.
fresh provalone, and swiss..
again, real cheese, not the package flavors in matching brick shape that you usually find in the supermarket.

Depends on my mood and the cracker it's topping but I'd say a nice medium cheddar or a good Swiss.
