I agree with Malcolm on the pieces, but I think that Artur Rubenstein's performance of the Ballades is definitive. His pacing, understanding of the architecure, nuances, and his mastery of the tempo rubato are unmatched.

Another of my favorites is Garrick Ohlsen's "Complete Polonaises". Technically brilliant, and musically very convincing, plus you get to hear many pieces not often brought to the fore.

This is a more difficult question than it seems. My personal favourite is the Ballades on DG performed by Krystian Zimerman. All four Ballades are featured, in my opinion, Chopin's greatest masterpieces.The performance is definitive and the recording wonderful, full and sonorous. It also has the Fantasie in F minor, Op.49 and the Bacarolle in F sharp major, Op.60.
I cannot recommend it highly enough.
