"Shiroi koibito" chocolates are a must, Japanese visitors from other regions always buy these chocolates when going to Hokkaido. Royce nama (raw) chocolates are also good.
Hokkaido is famous for its dairy and sea products (cheese, yogurt, salmon roe, crab, squid), unfortunately finding these products in canned/dried form is difficult and the quality is not the same, so I can't recommend them as souvenirs.
Ainu wood carvings are also recommended, the most common ones are figures of bears, owls, foxes, salmon; you could also find ainu traditional dress, necklaces, etc.

Ainu-style wood carving goods are nice too. Lucky charm, key ring, ornaments, nameplate...I love them. Hokkaido is famous for their brown bear (Higuma) and fox (Kitakitsune), so there are big and small Higuma/Kitakitsune wood-crafts too.
Seafood, potato, milk and corn related foods are also good. But most of them are available everywhere in Japan, so be careful and find something "special" ("gentei" in Japanese) in Hokkaido.

also dont forget "shiroi koibito" chocolate from Ishiya Patisserie, Sapporo!
and if u love the ramen served there, (which i personally love it to bits!)u can purchase ramen boxes there especially the Nama Sapporo miso base Ramen or butter soup base ramen. u can take them home and cook it when u want to eat! tastes great like what u get in Hokkaido!
Also, the dried scallops (hotate) from Hokkaido. they come in different flavours like cheese scallops etc... they are dried and are eaten as snacks! really good to go with light porridge or salad or just like that! They're much cheaper if u buy it there than waiting for imports which costs lots more! :)

Whenever one of my friends went to Hokkaido for the business trip, he bought strawberry chocolate of Rokkatei.
Strawberries are coated with milk/white chocolate.
It is good.
Rokkatei is the famous Hokkaido shop selling mostly cookies, candies, chocolates, ice cream, and so on.
Everything is good there, but especially this Strawberry chocolate is fabulous.

i would recommend going to Porotokotan near Tomakomai, or Akan up near Kitami. There are some Ainu villages up there. I would high recommend it. Ainu are the native people to Japan, really wonderful people. Get some wood carvings or traditional Ainu products or something. Its awesome. also get Royce chocolates or jingiskan candy or something. its an experience!!!
