This is a new bead craft, which is very popular now.

You create the pic that you want and only spread water on it and it will stick together.

The little bead things are called "Bindees". they can be bought at toy shops and I presume craft shops.
The modelling clay material (the gingerbread man necklace) is Fimo. Can buy it at craft shops.

I've seen these things in toy stores, you just wet them and they stick together, little short tube things, you buy them in tubs. Sorry can't remember what they're called. Back in a sec.
