Hello Karen,

I love Welsh Rarebit served up in many ways but my favourite is:

After toasting the bread I cover the slice with medium size slices of strong cheddar, put it under the grill until it is nice and soft and finally sprinkle Worcestire Sauce over the cheese, then return it to the grill to finish melting and 'browning off'.

Sometimes I spread a light layer of Marmite on the toast before doing this.

Nice n' tangy

Thats the way I like mine but I am sure you will get some really interesting recipes.

I shall be watching for some myself.

Lets hear it for the humble Welsh Rarebit.

PS: I always feel it is better when you actually use the grill to toast the bread, rather than the toaster.

Cheese on toast is; cheese on toast. Nothing else should be considered or added except brown sauce or Worcester sauce. The cheese should always hang over the crust and be thick enough to see teeth-prints after each bite and the slice of bread should only be cut once or not at all; no more than once though.
The cheese should be cheddar.

I toast some bread first first, then cover with grated cheese making sure the whole surface is covered without spaces, put under the grill on a medium heat until the cheese melts. I love using mozzerella with a bit of cheddar.

This is not exactly cheese on toast, but it's the way I like it. Drain a can of Tuna in oil and mix with Kraft mayo. Add salt and pepper and place on toast. Cover with a strong cheddar and melt under the grill. Serve with chilli sauce.

Keep it simple!
Put good quality mature cheddar cheese on top of thick sliced toasted bread (must be white bread!). Add a couple of slices of tomato and a few bits of fresh basil. Bung it under the grill until it's bubbling,.........
Delicious!
