Make sure you score the rind with a sharp knife then smear a light coating of oil on it then add an even coating of salt before putting it in the oven.

Pork Crackling is tasty anyway if you get a good bread of pig, a gloucestershire old spot or something, but all you need to add to bring out the flavour is some salt, rub some olive oil in the skin, then salt and this will make it more crispy too, god i love pork crackling

Rub oil and salt in and put oven on very hot for first 20 mins.
If the crackling isn't done by the time the pork is cooked you can always take it off the pork and whack it back in the oven on hot while you eat your dinner.

Before putting it into the oven score the skin in strips of about a centimetre in with all the way along then, in the opposite direction score it once in the middle. pour over olive oil, uub in some large grain sea salt and sprinkle lightly with flour, put in the oven until pork is cooked. remove from cooked pork and break off cooked bits into the strips any bits still soft can be either put sraight back into the oven or grilled for speed.

put oven on to highest settiny this will start it off dont forget to score salt and oil and massage well in then after 20 mins turn oven down to cook pork georgous crispy crackling yum would love some now maybe because of you i will have same for dinner cheers enjoy

If your crackling is not crisp enough when the pork is cooked remove crackling from joint and grill till crisp.

put your oven on flat out at the beginning for 20 mins then turn down to the right temperture.
