My girlfriend and I have done hundreds of things together, and we don't have any ideas left. I live in Phoenix, and we've done all of the major things to do there. I don't really know what to do anymore. Myabe something to do with a park, or a long drive by ourselves. But I don't know. Any ideas?

Go to 44th st and camelback rd and then turn towards fashion square mall and drive until you see the road "arcadia", turn into there and keep driving until you get to the top. You get a great view of the city from there, I did this the other day it was AMAZING!!! Works best at night.
READ THIS. I just found out you can get a 25$ parking ticket for doing that. I've been up there twice and its never happned, but it happned to my sister. Instead go to papago mountain at sunset. Or just pay the 25$ if you get caught which isn't a big deal anyways. Chances are you wont get caught because I know people who do that all the time.

Maybe slow down a bit and do things FOR her, rather than WITH her. You can only play tourist for so long.
Alternatively, buy some backpacks and plane tickets to a cheap foreign country.
You sound like someone who's focused on experiencing things. Try just being together, and enjoying each other in the boring old day-to-day stuff. You'll spend a lot less money. Just stop talking about how bored you are when you're together! How could you be bored? She's yours, and she's right there with you!
Your relationship should not be defined by the number of theme parks and restaurants you visit.

Picnic with wine and cheese If you are old enough. Make believe you are tourist and go to the big tourist spots. Go to a good comedy theater. Have a huge BBQ with all of your best buddy couples. Ride bikes through a local bike trail. If you are near water, rent a canoe, or jet skis. Have a Champagne brunch at a local posh restaurant.

Hmmm.. If you have the cash to spare, take her out in a vacation! Out of the country if you want to play it big:) But if you don't have, just take joy in the simplest things you share with her... Try extreme sports also. Bungee jumping and the like...

Turn off the lights. Take off your clothes and have her do the same. Hold her tight and if no ideas come to mind then you are not meant for each other and go your separate ways.
