Get a deep roasting pan and cover the bottom of it with enough water to come up 1/4 inch. Chop onions, carrots and celery to your taste and scatter into the water. Add a packet of onion soup mix, a head of cabbage cut into 1 inch squares, and any and all vegetables that you like. I use broccoli florets, yams and russett potatoes, a couple of zucchini and summer squash (or use butternut in autumn). Add 2 cups of red wine, 1 cup packed brown sugar, a package of frozen pearl onions, 12 oz container of unsweetened apple sauce, a package dry apricots and 2 cups raisins, 1/2 cup apple cider vinegar, 1 cup of yellow mustard and 1 large can crushed tomatoes. Spread all these ingredients evenly in the roaster and top with venison leg. Salt and pepper the meat and turn it over in the liquid. Cover tightly and put in the oven for 11 hours at 275 F. At end of 9 hours, remove the top and stir the gravy around the meat. This is a fantastic recipe and must be followed closely to achieve a taste and flavor that is beyond words. This works with any game or a mixture, including a chicken or large beef brisket. If cooking chicken or beef, the time should be about 8 hours tops or the meat will almost disintegrate. In fact, you can start the cooking of game meats at 350 for 2 hours and then add chickens or beef brisket and then turn it down to 275 for 8 to 10 hours for a good meal. Serve over noodles, rice or crusty bread and have a mixed green salad with mild dressing as an accompaniment. Have sliced peaches and molases cookies for dessert. Hope you have fun and enjoy!
