I would make a sort of fake "Waldorf Salad" out of it.
Cut the boiled, cooled chicken into little chunks.
Add any or all of the following:
chopped walnuts, diced apples or pineapple, maybe some diced celery or water chestnuts, minced garlic, diced or grated raw carrots, grapes or raisins (if you like that sort of thing in chicken salad - I don't).
Then toss with a light mayonnaise dressing, or sweet and sour or poppy seed dressing of your choice, and serve on a bed of crisp lettuce, with some lightly toasted pita bread.
If you want it warm, dice the chicken breast, or cut into small slices, and serve with cooked rice and diced cooked carrots, with some teriyaki sauce. You could put chopped water chestnuts in that, too :-))

We used only boil our older chickens because they are a bit tough and dry.
A Thai green chicken curry is a superb meal with some rice and Roti Bread. I use fresh corianda from my garden as well as some fresh chillis. This recipe looks good.. just use the chicken instead of the beef!

If it's an old bird, you need to cook the chicken long time to make it tender. In curry, this lets the various flavours purvuade the meat. It is best cooked and then cooled and reheated the next day!
I also do a slow cooked stew with chicken and vegetables. I put it on the stove on a really low low heat in the morning and let it cook for most of the day!

Add noodles, carrots, salt pepper a few boullion cubes, a splash of oregano, a dash of sage and boil it for an additional 45 minutes and presto, Chicken noodle soup. Yum Yum. Best cure all there ever was. Just let the chicken fall apart on its own or use a fork to break it up into bite sized pieces.

There are several options.
chicken salad -
break up chicken into bite size portions
dice celery stalks into small bite size portions
boil a few eggs and dice them as well
diced onion
mayo
chicken soup
save broth after boiling chicken
add cup water to broth
portion chicken
diced celery
diced carrot
diced onion
add to broth water mixture and reheat

Dice the meat, heat it up in about a tablespoon or two of butter, sprinkle it with any herb in your shelf - oregano, sage, tarragon, rosemary, etc. very gently! Be inventive.
Make a nice dark green leafy salad with half cherry tomatos and sprinkle half a cup of the chicken over top. A few seasoned croutons, Green Goddess dressing or one of the wine vinegar dressings and it is a lovely meal.

Chop it up fine and make chicken salad out of it. Some mayonnaise, some herbs, maybe a few sesame seeds, perhaps some celery.

Start over. Bury the deceased chicken in the back yard, pray for forgiveness for wasting the meat of a soul that gave it's life for you to eat. And then grill up another breast.
Sometimes, you just have to have the pride to start from square one.

57 AND HONEY GLAZED KABOBS
3/4 cup Heinz 57 Sauce
1/4 teaspoon Morton's hot salt
1/2 cup honey
3/4 teaspoon garlic powder or fresh cloves garlic, minced
1/4 cup balsamic or red wine vinegar
4 skinless chicken breast halves, divided widthwise
cherry tomatoes
green or red bell peppers, quartered and seeded
small white boiling onions or Vidalia onions, quartered
2 inch cubes eggplant, yellow summer squash or zucchini
olive oil or olive oil spray
garlic and onion powder
salt and pepper to taste
kebab skewers
In a small saucepan, combine the first five ingredients. Bring to a boil, reduce heat and simmer for 10 minutes. Pour off 3/4 of the sauce into a separate bowl and save for brushing vegetables while grilling. Note: optionally reserve 1/4 cup for use at table in a separate serving bowl.
Add the chicken pieces to the cooled mixture remaining in the saucepan and allow to sit for 10 minutes while heating up the grill.
Meanwhile, wash and chop the vegetables into one or two inch slices or cubes; peel the onions, quarter the peppers. Leave cherry tomatoes and small boiling onions whole. If using Vidalia Onions, quarter them to fit on skewers.
Soak the bamboo skewers in water (or use metal ones). Alternately thread chicken and vegetables on to skewers. Spray or brush vegetables with olive oil. Sprinkle lightly with garlic and onion powder.
Grill over white hot coals 12 to 15 minutes, turning often, until chicken is cooked. Brush liberally with 57 sauce mixture from bowl (discarding any sauce remaining in pan).
Grill and continue to brush with sauce until kabobs are glazed and nicely browned.
SWISS CHICKEN
9"x13" glass baking dish
4 lg chicken breasts (boil until well cooked)
1/2 lb swiss cheese
1 lg (family size) can of cream of mushroom soup
6 servings of chicken stuffing, made in advance
Spray glass dish with cooking spray...... Cut cooked chicken into small bite-size pieces. Line bottom of baking dish with chicken, layer with swiss cheese, next layer would be mushroom soup spread evenly over cheese, next layer would be cooked stuffing spread over soup. Bake in a 350 preheated oven for 30 minutes or until you see bubbling through stuffing. DO NOT COVER while baking.
