Well the purpose of using leavenings is to rise the dough that you are making, and make it "lighter" or "fluffier" to the palate. It is a chemical reaction that "eats" the sugars which causes gas bubbles therefore causing the dough to rise. Products such as yeast, and baking powder cause the dough to rise but baking soda not so much...if you are cooking a cake use baking POWDER if making bread use yeast activated with warm water about 75-80 degrees. Let the bread sit for at least an hour.

leavenings are like yeast, baking powder, baking soda, beaten egg whites, etc. they make baked products rise.

Flour and water make paste!! Paste sticks things to other things. Sugar, baking powder/soda, eggs and oils help the stuff to stick to our hips and tummys in a more way.

Leavening is the component ingredient that causes baked goods to rise. The other ingredients enable you to bake something.
