Our recipe calls for you to push the persimmons throw a strainer of a food mill but neither method works and we are forced to remove them by hand.

?? Usually when you make jelly, you are only using the juice, not the pulp. So, tossing the whole mess into a jelly bag, and throwing out the pulp and seeds would seem to work.

Persimmon pits aren't that hard to remove -- why don't you pre-pit them (slice into quarters, and remove with a knife or spoon) before you cook them? Or just fish them out with a teaspoon before you put them in the food mill.

Raspberry seeds, now *that's* a challenge. But persimmons? Maybe you have a particular seedy variety.
