You are spoilt for choice in NZ that’s for sure. I spent half my life there and been there done that on most things. Since I lived in the south island (which is better anyhow) I’ll give you some ideas’.

My husband and went to New Zealand 3 years ago and loved everything about it. There are so many places to go that are amazing. We were only there for 15 days so we only had enough time to do the North Island. I would suggest going on what is called the Kiwi Experience. It was amazing. Check out the link. The things you shouldn't miss on the North Island are Black Water rafting in Rotorua, Zorbing (amazing and fun) and Lake Taupo. These are just some of the things to do. New Zealand is the adventure capital of the world and there are so many things you can do. I even went sky diving over Lake Taupo, best experience of my life. I strongly recommend the Kiwi Experience. We found it by accident and it made our trip.
