Here's a scripture from the Bible that explains.
Matthew 8:28-34 says, "When he arrived at the other side in the region of the Gadarenes, two demon-possessed men coming from the tombs met him. They were so violent that no one could pass that way. 'What do you want with us, Son of God?' they shouted. 'Have you come here to torture us before the appointed time?' Some distance from them a large herd of pigs was feeding. The demons begged Jesus, 'If you drive us out, send us into the herd of pigs.' He said to them, 'Go!' So they came out and went into the pigs, and the whole herd rushed down the steep bank into the lake and died in the water. Those tending the pigs ran off, went into the town and reported all this, including what had happened to the demon-possessed men. Then the whole town went out to meet Jesus. And when they saw him, they pleaded with him to leave their region."

The pig-owners must have lost a bit of money if they weren't insured !
Presumably he had revelation from God so knew it would not injure the owners, whom we don't know about.
There may be all sorts of factors we don't know - those locals may have treated Legion very badly, giving the demons some legal rights in supernatural justice things (we don't understand).
It also perhaps showed up the locals as being not very concerned about Legion, but awed and sad at losing the pigs.

Funny, I was just thinking about that. I think, and this is just pure speculation on my part, it's because the demons asked Him to and out of His great love He granted them this request. It caused no harm to any humans. Even though they were fallen angels, He did not deny them this small request because even though they'd betrayed Him, and had to be cast out, He still loves them.
