I was told that it's a slight discolouring because of contact with oxygen - but because they were kept in a fridge and are within the best before date it's ok to eat. Any further data?

I would discard the pork chops.

Usually it's lunch meat and cured meats that have the iridescent green hue due to oxygen exposure and the myoglobin/hemoglobin in the meat... it has to do with the nitrites/nitrates in the cure/preservation.

but fresh meat that's turned green. THROW IT OUT!

In fact, fresh pork will redden with more air/oxygen, not turn green.

I'm not someone to be scared off by a best-before date or a couple hours out of the fridge.....

BUT:

You just don't mess with pork. Not worth it taking chances, bad pork will make you SOOOOOO sick!! And green is not an okay colour for meat. Ever.

Hi,
To be honest - it's best not to eat the chops - I mean you don't want to get food poisoning do you? Also when you buy pork again - remember to wrap it up properly.

If it's just a sheen then yes they're fine to eat. It's just the oxidisation of the skin, similar to when pickled onions get yellow spots, they're still fine to eat, it's just a chemical process and does not affect the meat itself, the colour will disappear when you start to cook them. Any bacteria would be cooked off anyway.

Personally, I would definitely throw them away. You shouldn't mess around with pork. The smell is always the telltale sign, though, if you don't like to throw away food.

If they weren't wrapped properly I would discard them. They could be contaminated and you might get food poisoning.

At your risk, if you really don't want to waste, cook them until they are piping hot. That should kill any organisms. Not appetising, imo

Let's get real here - are you asking me if you should eat "green" meat ?

What do you suggest ?

Maybe next time you will be asking if it's OK to eat bread with blue particles in it. Or maybe potatoes that stink to high heaven as they have turned to mosh.........DITCH THE PORK.

If they don't smell or are slimy than they may be gppd.
I never had good, eatable pork do that though.
