Go into Start | Run | Type in "taskmgr" and click OK.
In the window that appears, go into the Processes tab. Check "Show processes for all users". You can now see all of the applications and processes running. You can end processes by clicking them, then clicking End Process.
Don't end explorer.exe, or anything running under a user account other than yours unless you know exactly what it does.

Correct #1.
To stop it running on startup though (which it sounds like it is), head to:
Start > Run > msconfig > Startup (Tab).
Uncheck any entries that you do not want running on startup & hit Apply.
Job done!
