Potluck Potatoes Recipe
Ingredients
2 pounds potatoes, peeled and cubed
2 teaspoons onion powder
2 teaspoons garlic, minced
2 cups sour cream
2 cans cream of mushroom or cream of chicken soup
2 cups cheddar cheese, shredded
2/3 cup Mozzarella cheese, shredded

Directions
Cook potatoes in boiling salted water just until fork tender.
Drain and cool.
In large bowl combine onion powder, garlic, sour cream, soup and cheddar cheese.
Fold in potatoes.
Spoon into greased 13x9 inch baking pan.
Sprinkle with Mozzarella cheese.
Bake at 350 degrees for 45 minutes or until browned and bubbly.

or Potluck Pasta
Ingredients
2 cups large shells, rotini, or elbow macaroni
1 - 10 ounce package frozen chopped broccoli, peas or mixed vegetables
1/3 cup chopped onion
1 - 10 3/4 ounce can condensed cream of celery, chicken or mushrooms soup, or one 11-ounce can condensed cheddar cheese soup
1 - 8 ounce carton dairy sour cream
1 - 4 ounce can musrhoom stems and pieces, drained
1/2 cup milk
1/2 cup shredded carrot
1 tsp dried oregano or basil, crushed, or dried dillweed
1/4 tsp pepper
2 tbsp grated parmesan cheese

Directions
In a large saucepan cook pasta, adding frozen vegetable and onion the last 6 minutes. Drain in a colander.
In the same saucepan stir together condensed soup; sour cream; mushrooms; milk; carrot; oregano, basil, or dillweed; or pepper. Cook and stir over medium heat till heated through.
Stir in drained pasta mixture; heat through. Transfer to a warm serving dish. Sprinkle with Parmesan cheese and serve immediately. Makes 10 servings.
To make ahead: Prepare as above, except omit heating the macaroni-soup. Transfer mixture to a 2-quart casserole. Sprinkle with Parmesan cheese. Cover and chill for 3 to 24 hours. To serve, bake, covered, in a 350 degrees F oven about 55 minutes or till heated through.

Here's an idea that you can make there. Bring a package (or 2) of the little cocktail sausages (not the ones filled with cheese), a 7 oz jar of raspberry preserves, and a bottle of white vinegar (and a measuring cup because you will only use 1/4 cup of the white vinegar).

Bring a crock pot if you have it or a pan if they have a stove. If you use the crock pot, turn it on high. If using the stove, turn it on medium. Place the raspberry preserves and the white vinegar in the pan/pot. Bring to a boil - it thins as it heats. Once it starts to boil, add the sausages, stir, and cook until the sausages are hot - not very long - like 5 - 10 minutes. Serve in a bowl with toothpicks. The sauce will taste like a nice Sweet/Sour sauce.

Another thing you could bring - again can be heated in a pan or crockpot - 1 can Campbell's Condensed Cheddar Cheese Soup - undiluted, 1 can Dennisons Chili without beans (both of those taste gross if you were to just eat them straight but in this - they come out great), 1 (8 oz) container sour cream, 1 1/2 c shredded Cheddar cheese. Put everything in the pot/pan and bring to the boil. Pour into a bowl and serve with Tortilla chips.

If you just bring the supplies, you can make them there in a very short period of time.

SERVINGS & SCALING
Original recipe yield: 3 cups

INGREDIENTS
2 quarts oil for frying
4 eggs
1/4 cup heavy cream
1/2 teaspoon ground black pepper
1/4 teaspoon salt
3 zucchini, quartered
3/4 cup Italian-style dry bread crumbs

DIRECTIONS
In a heavy saucepan or deep fryer, preheat oil to 350 degrees F (175 degrees C).
In a blender, mix the eggs, whipped cream, pepper and salt. Transfer the mixture to a medium bowl.
Slice the zucchini into pieces 2 to 3 inches long. Dip the pieces into the egg mixture, then coat them with the bread crumbs.
Carefully place the battered pieces in the oil and fry 3 to 4 minutes, until brown and crispy. Drain fried pieces on a paper towel. Repeat until all the slices have been fried.

Corn Casserole
2 can cream style corn
2 can whole kernal corn
2 boxes Jiffy cornbread mix
2 sticks butter
3 eggs

Mix all well, place in greased 9 x 13" dish. Bake at 350 degrees for 30 - 45 minutes.

Baked Beans with Smoked Sausage
1 can each: pork and beans, pinto beans, black beans do not drain
1 small can crushed pineapple
1 pound smoked sausage, sliced into bite size pieces
1/4 c. ketchup
1 t. prepared mustard
2 T. worchestershire sauce
1/2 c. brown sugar

Mix well, place in large casserole, bake at 350 degrees for 45 minutes to 1 hour.

Brownie Trifle
1 pkg brownie mix (prepared in 9 x 13 " pan) Prepare according to directions for cake like brownies. Let cool completely.

Combine 2 1/2 c. milk with 1 small pkg instant vanilla pudding and 1 small pkg instant chocolate pudding, beat on low speed for 2 minutes.

Cut brownies into 1 inch cubes. Place half of cubes in Trifle Bowl. Cover with half the pudding. Cover top of pudding with 4 ounces of Cool Whip. Repeat layers, sprinkle top with 2 - 3 chopped up Hershey candy bars.

I have a yummy yummy recipe for you. It's called Eleanora's Spaghetti Pie and Martha Stewart featured it a long time ago. It's a big hit at our house! There's a picture on the website attached too.

I usually bake it off in a 9 X 13 casserole dish instead of a cake pan (cut into squares and it serves more people).

Instead of the soppressata sausage, sometimes I just buy the spicy Jimmy Dean sausage, fry it up and crumble it up to stir into this casserole.

It's rich, creamy, cheesy, sausagey and makes the house smell DELICIOUS! You'll be drooling as it bakes for an hour.

Then cover the casserole with aluminum and transport it easily in the car. You can warm it in the oven or microwave in NJ.

Eleanora's Spaghetti Pie

Ingredients
Serves 10 to 12
1 tablespoon unsalted butter, room temperature
Coarse salt
1 pound spaghetti
6 large eggs, lightly beaten
1 pound mozzarella cheese, shredded (about 4 cups)
12 ounces hot soppressata sausage, cut into 1/4-inch dice
1 cup (4 ounces) finely grated pecorino Romano cheese
1/4 cup heavy cream
1 teaspoon dried parsley
1/2 teaspoon freshly ground pepper

Directions
Preheat oven to 375 degrees.with rack in center. Butter a 10-inch-by-3-inch cake pan. Line the bottom with parchment paper; set aside.

Bring a large pot of water to a boil; add salt. Cook spaghetti, according to package instructions, until al dente. Meanwhile, in a large bowl, combine eggs, mozzarella, soppressata, pecorino Romano, heavy cream, dried parsley, salt, and pepper. Stir to combine. Drain spaghetti, and add to the egg-and-cheese mixture; stir to combine. Pour mixture into prepared pan, and cover with aluminum foil.

Bake about 40 minutes. Remove foil, and bake until lightly browned and crisp on top, 20 minutes more.

Transfer to a rack to cool, about 10 minutes. Run a knife around the edge, and unmold, removing parchment. Invert, cut into wedges, and serve hot.

If you have a crock pot to keep things warm you have more to work with. (and you can transport in the crock) so ideas are rigatoni, tuna casserole, hamburger helper, chicken & noodles..you get the idea. Have fun!
