Depends on if it's an hourly position or salary.
Salary, you're stuck. You'll have to work late to complete it. (well not really, you can still leave at your normal 5, but spending a little extra would appease the boss)
Hourly; say "In order to save you from paying me overtime, i'd prioritize the work that needed to be completed that day and work to complete as much as possible, but still walk out the door at my scheduled time.

Get the most important things done, and if possible ask for help in getting the other work done, if it couldn't be put off to the next day. I would plan on staying if it couldn't be put off and finish it before I would go home.
