Pork Bar-b-que Recipe
Ingredients
3-lb bonless shoulder roast
Choice of BBQ sauce
Directions
Put roast in crock pot and pour bbq sauce over roast.
Cook 8-10 hours on low
Take knife and fork and shred the meat after 7 hours and stir then continue cooking in the crock pot.

After a long day I find a simple pasta dish to be easiest and you can dress it up any way you like.
I like to dice up boneless/skinless chicken breast, toss them in a skillet that has some olive oil and garlic heating in it, when the chicken is no longer pink I add in some al dente pasta, you can add in any veggies you like, my favs are broccoli-which should be added before the pasta--and mushrooms, you can even do a bag of frozen veggies if you prefer, toss and heat through, you can add in cheese, you can add a jar of al fredo sauce or whatever.

cooking is a method of relaxation for me ...except when the kids are howling/bouncing/zooming around the room!
an easy meal to fix on a worn out kinda day is Tortillas.
you can do alot of things w/them.
mini pizzas
-put tomato sauce on the tortillas, top w/favorite toppings (pepperoni, black olives & cheese at my house), put in the oven at 350 until cheese is melted.
soft tacos
-brown some hamburger (add seasoning if desired), put on tortilla, top w/lettuce, black olives, cheese, tomato chunks
grilled cheese
-take a tortilla, butter one side, put it in a hot skillet butter side down, put cheese on it, top w/another buttered tortilla, brown both sides.
layer casserole
-brown hamburger (if desired), mix in a bag of frozen mixed vegetables & a can of cream of xyz soup (i prefer celery or mushroom, but use what you like), put a layer of the soup/vege mix in bottom of casserole dish, sprinkle w/shredded cheese, put tortilla on, repeat until dish is full or run out of ingredients, it is always best at my house w/extra cheese on top of it all.
desserts
-cut up snickers bar into small pieces (1/2 inch or smaller), place on 1/2 of tortilla, fold over and heat in skillet or oven until gooey
-butter both sides of tortilla and cook in skillet until hot/crisp, remove and put on plate, sprinkle w/cinnamon & sugar
