Chicken-fried or country-fried steak is usually made with round steak, tenderized then dipped in an egg and milk mixture, then dredged in seasoned flour or bread crumbs. The coated steak is then fried in hot fat until the coating is crispy and browned, much like fried chicken. A milk gravy is often made to be served with the steak, along with mashed potatoes.

Country fried steak can also be made by coating the tenderized steaks with seasoned flour or crumbs. Smothered steak, another version, is fried then simmered in gravy, which makes a tougher cut of meat even more tender.

According to The Dictionary of American Food and Drink by John Mariani, the term "chicken-fried steak" first appeared in print in the year 1952. It has long been a favorite dish in the South, Midwest, and Southwest United States.

Like the chicken, the steak is seasoned and deep fried. But before deep frying, it has to be tenderized.
A variety that we do here in Puerto Rico is pavochon. Lechon is the pork roasted on the open pit. So the pavochon is the turkey seasoned like the pork and roasted on the open pit like the pork is.
So, preparing meats out of the traditional ways is a new method of cooking so as to change the menu.
This chicken fried steak can be deep fried after dipped in batter, or seasoned flour. Or you can season and tenderize the steak and since it cooks fast you beat 2 eggs in a bowl. In another bowl you crush up either Town house cracker or Ritz which ever you prefere, just enough to cover the meat. You pass the meat into the egg mix then you roll it in the crushed crackers and fry. This is good for skirt steak, cubed steak or pieces of sandwich steak.

Actually, there is something chicken about it...the process of frying is like that of frying a chicken. I would assume that chicken was fried before steak frying, so when ppl started frying steak they dubbed it "chicken fried."

Because it is fried just like "fried chicken". It is battered and pan fried or deep fried. and then baked to finish it off.

Think KFC but with steak.

Because it's coated with flour and salt and pepper before it's fried, just like you would do if you were frying chicken. But, you're right - there's no chicken in it.

because this is fried the way rooster replaced into fried. If it replaced into only fried steak you would possibly want to take a chunk of meat and placed it in warm oil. rooster used to get heavily lined flour formerly frying. To make rooster fried steak you pound the beef thinly then pound flour into it. turn it over and pound back. turn it over and pound back. Fry in shallow warm oil till crisp. Serve with cream gravy, Baron Verulam and a defibrillator.
