You need a HIGH heat for doughnuts - but for the love of God, if you are having to ask us for advice please do NOT do what Dianne said and "drop" cold dough into smokingly hot oil - unless you fancy a trip to hospital with second degree burns.
VERY gently, LOWER the doughnut into the oil - like you would a basket of chips if you were worried the oil was too hot - 375 degrees is as hot as you can risk oil getting without self-igniting. It is about the temp it also starts to smoke on its own. Treat it with a 5hitload of respect.
I am not trying to be unpleasant but if you need to ask how to do this with oil heated almost to flashpoint, then might I PLEASE suggest that you actually BUY a deep fryer - they are not that expensive - and can be so much cheaper than re-decorating after a fire - let alone the cost of replacement sterile dressings for you hands and face.
If you INSIST on proceeding anyway, LOWER the doughnut GENTLY into the pan - IF the pan catches fire, DO NOT throw water on, just turn off the heat, cover it with a damp cloth.

If you have a candy thermometer you can put oil in a heavy pot like a dutch oven or deep sauce pan. the candy thermometer will allow you to monitor the temp. Usually you have to deep fry on high or medium high. Only fill the pot half with oil to prevent boiling over and causing fire.

If you have a wok that will often work to deep fry. You can heat oil till smoking hot on the stove and then drop the dough in it. Be careful not to start a fire or get splashed with hot oil. It really is easier to just buy them at the donut store.

yes, you can use a pot with oil. do not fill the pot over half full of oil
use a thermometer (get one that clips to your pot so you can monitor temperature constantly) and heat to 375 degrees.
Use your knob to control the heat, start on about medium to medium high and watch the temp.--do not leave unattended.

The reason you need a deep fat fryer is so you get an even fry temp. Pan frying will cause uneven heat and a very greasy product. Typically you fry Oroes and Twinkies in a very light tempura batter. This requires a deep fat fryer so that it comes out light greasless and flaky. Tempura needs to cook fast and at very even temps.
