Bulgar wheat, cous cous, Polenta, lentils... basically any pulse, grain or bean is a great alternative to potato:)
If you want somthing similar but different go for your other tubers or roots such as sweet potato, jerusalem artichoke, yacon tubers, swedes and turnips.
Or the pumpkins and squashes are always good...

the obvious choices... rice, beans, cous sous, noodles etc...
i like to have sweet potato. It doesn't really taste anythign like potato but has the same consistency so goes nicely with most meals.
you can do the same stuff as with pots- roast, boil, mash and so on.

I always do like rice with gravy; Spanish rice; macaroni and cheese.or noodles.They now have about 12 different flavors at the store where all the hamber helper is; and they are really tasty.One great one is rice with broccoli and cheese.
