The lowest fat version you can do is straight forward boiled potatoes.
To Leen Argh - there are 75 calories minimum in every 100gms of potato, regardless of what you do with them.

Okay, this is tasty and sooo good for you.
It literally has no calories!
Basically, you microwave a large potato for 5 minutes or until a knife goes smoothly through it.
Then, you rub it with oil mixed with salt and bake it without foil or baking paper and pop it in the oven for half an hour, gas mark 8 (don't know what degrees celsius that is, sorry!) and it should come out golden/brown.
After, mash it with the skin on (or off, whatever you prefer. Just remember to bake it with the skin on either way cos it's more flavoursome).
After it is mashed, pile it onto a plate and top it with some fat free, Greek yoghurt (add some chilli powder/sweet chilli sauce to the yoghurt to give it on hell of a kick!)
Enjoooyyy!
NOTE: If you can't hack the hotness of chilli powder, try lemon and herb dressing with the yoghurt?
Trust me, it may sound like mash and yoghurt but it's -
1. a veggie alternative
2. healthy snack
3. bloody gorgeous!

My favorite was to cook potatoes is to cleans and skin them. Then chop them into large squares and boil them until they are cooked. Drain and add a tiny amount of butter and sprinkle with fresh parsley. Its simple but the fresh herb with the lightly buttered potatoes is so good. I love it.

New potatoes boiled are lowest - baked in their jackets are very good. Old potatoes mashed are fine, but don't add butter - use skimmed milk instead if you must! Chips obivously are the worst!

I know hundreds of ways, but here are two for you:
These are very healthy as they are from weight watchers:
au gratin potatoes
1 tbs butter
1 med onion theinly sliced
2 level tsp flour
500ml skimmed milk
1000g potatoes thinly sliced
125g half fat cheddar cheese grated
1 tsp salt
1/4 tsp pepper.
Preheat oven to gas mark 5/190C/375f
Melt butter in a large casserole dish over med heat. Add onion and cook, stirring occasionally until onion begins to brown, about 5 mins, stir in flour: add milk slowly stirring, add potatoes, stir to mix bring to the boil, stir in 3/4 of the cheese, salt and pepper.
Level out surface. Transfer to oven and bake for 1 hour, uncovered. Cover and bake until potatoes are tender when tested with a fork, about 20 min more.
Preheat grill, sprinkle remaining cheese over potatoes, grill until the cheese is golden brown about 1-2 mins. Cool for 5 mins before slicing into
8 pieces.
Baked Potatoe Skins/ spinach and Bacon
3 med potatoes, baked, sliced in half and cooled.
low fat cooking spray
450g spinach chopped (if frozen thawed and squeezed dry)
100g low fat soft cheese
1/4 tsp sa;t
1/4 tsp pepper
3 med rashers lean back bacon, cooked and chopped
Preheat oven gas mark6/400f/200c. Scoop out flesh of potstoes, leaving about 1/4 flesh in potatoe (reserve remaining potato flesh for another use such as mashed potatoes.
Place potato halves on a baking sheet and coat with cooking spray. Bake until lightly browned, about 15 mins. While potato skins cook, combine spinach, low fat cheese sal and pepper in a med bowl until well blended.
Remove skins from the oven and spoon 3 tbsp of spinach mixture into each potato half, bake until warmewd through, about 5 mins.
Remove skins from the oven and top with 1 tbsp of cooked bacon.
