BTW a few weeks ago I learnt an interesting alternative to the classic cheese omelette.
bake your omelette and when nice and dry take it out of the pan and sprinkle your cheese on top and pop under the grill for a good minute. The flavours of both come out better this way than when theyr are mixed together.

You could try a Spanish omelette:
8 eggs
2 large potatoes
Salt & pepper
Olive oil
Peel, wash and chop the potatoes into small chunks.
Season.
Sauté the potatoes until golden.
Beat the eggs, lightly salt and add potatoes.
Pour the mixture into the frying pan and cook for 5 minutes.
Cook for 3 minutes on the other side, turning or place under a hot grill to finish off.
I usually add fried bacon/ham, peppers, onions and sometimes some grated cheese - yummm!
Am going to have to have one now for lunch!

If you are well into omelettes, you may be interested to know that there is a book called (wait for it...) "The Omelette Book" compiled by Narcissa Chamberlain. The blurb says it contains: "Over 300 recipes: 6 basic omelettes, 45 fish omelettes, 61 meat omelettes, 91 vegetable omelettes, 23 poultry and game omelettes, 29 miscellaneous omelettes, 47 sweet omelettes and 16 sauces" !!!

Ok, I like sauté mushrooms, fry up some bacon bits with finely chopped onion, then add it all with a sprinkling of blue cheese.
Another option is savoury mince topped with grated cheddar.
You can also use ham, sausage, tuna, salmon or peppers.
I usually make the egg with a dash of cream and a sprinkle of baking powder, which makes it light and fluffy.

The hotel i work in serve not only cheese but a variety of them. i will name a few i notice the customer like to order and my mom favorite filling for omelet
in the hotel they have
1)mushroom and cheese
2)mushroom and ham
3)mushroom and bacon
4) ham and bacon
5)ham and cheese
6)sausage and ham
7) sausage and cheese with bacon
my mom's omelet
1) big onion and red chilly
2) long beans
3)cabbage with chilly
4) only onion
then come to my favourite omelet
omelet with salsa and fruit salad
in the place i live in they use omelet and wrapped rice in them

Beat 2-3 eggs with a tsp of water, never milk, water makes the eggs fluffy.
In a frying pan cook onions, peppers, mushrooms and thin sliced broccoli.
When veggies are tender add your egg mixture to pan, Add your favorite cheeses. I like mozzarella ans cheddar.

Ham, tomato, garlic, herbs, black pepper, any cheeses, peppers, chilli, mushrooms, onion, bacon, stir fried veg (i'd cook it a little first then poor on your eggs and omlette it), cooked chicken, spinach, courgette.
Anything you like really. If it takes a bit longer to cook I'd fry it first like chicken or onion or any veg.
Personal favourite? A bit of cheese with a little mixed herb... Mmm...

Shake any made in Mexico hot sauce over warming omelette.
Once you have your omelette in a plate surround it with cherry tomatoes each slit on one side and having had one smoked oyster thumb-pushed inside. Invite partner to share if you want to enjoy the tabletop twice.

Pepperoni, Mushrooms, Onion and Potato(Pre Boiled and diced) are a smashing combination and you can always put the cheese on to and shove it under the grill for a min as well.
